Khao soi (ข้าวซอย) is an extremely famous northern Thai dish that includes yellow egg noodles served in a coconut milk curry. You'll find khao soi all over the place in Chiang Mai, however, I've honestly had a lot of bad bowls of khao soi that are bland and sweet. Khao Soi Khun Yai is a small, open air, restaurant, that serves what I think could be the best bowl of khao soi in Chiang Mai. The curry is red brown in color, packed with spices, not too sweet, and extremely flavorful.
Ingredients:
- 1. Vegetable oil 400ml
- 2. Thai red or yellow curry paste 4 tbsp
- 3. Mild curry powder 4 tsp
- 4. Red chilli flakes 1 tsp
- 5. Can coconut milk 400ml
- 6. Coconut cream 150ml
- 7. Vegetable or chicken stock 200 ml
- 8. Fish sauce 2 tbsp
- 9. Juice 2 limes
- 10. Skinless boneless chicken thigh 500 g
- 11. Chinese dried egg noodles 300 g
- 12. Rice wine vinegar 150 ml
Cooking methods:
Step 1
First, make the pickled chilli & shallots: Put the chilli and shallots in a small bowl and pour the vinegar over. Add some salt and let it sit to pickle while you make the curry.
Step 2
In a large saucepan, heat the 1 tbsp vegetable oil. Add the curry paste and turn the heat down to medium. Cook for 5 mins, then add the curry powder and chilli flakes. Cook for 1 min more, then add the coconut milk, coconut cream, stock, fish sauce and lime juice. Bring to a simmer.
Step 3
Chop the chicken into pieces and add to the curry. Cook for 15 mins or until tender.
